Lysozyme Free

For many the idea of a Lysozyme free future, for medium & long maturation cheese’s. Has merely been the stuff of science fiction!

However the cleaver minds over at our partners in Igea, who have been busy developing a game changing new culture! This new culture is named unsurprisingly No Blow! A new string to the bow of the all ready popular bio protective range. Shield No Blow, has a number of benefits to it’s use within dairy manufacturing.

The two main points of this innovative culture are.

One its clean label as a culture not an E number.

Two No Blow is not classed as an allergen, due to not being derived from egg’s or alike.

Lysozyme but not..

As was mentioned earlier, the two most notable features of this novel culture are that.

Firstly, No Blow’s ability to provide a clean label.

Secondly, No Blow by its nature is able to offer an allergen free solution as well.

These traits are mainly due to the fact that, with No Blow being based on Lactiplantibacillus plantarum. And that serval of these strains have been found, to play a curial role in the control of Clostridium tyrobutyricum.

This control property is primarily down to a unique combination of organic acids. Which are naturally produced by the metabolism of SHIELD No Blow’s array of microorganisms.

When combined it has been found that, No Blow creates unfavourable conditions. Primarily for spore germination! But notably against the cellular proliferation of Clostridium tyrobutyricum as well.

The efficacy of No Blow within the cheese, through various studies. Has been found that No Blow is present throughout the Cheese’s entire shelf life. Thanks due, in part to the cultures persistent bioactive activity.

Specifically, Shield No Blow not only effectively counters & prevents late blowing in cheese. No Blow also preserves the product’s quality throughout it’s maturation.

Challenge tests.

Igea having taken full advantage of their pilot plant, have been able to do extensive testing on No Blow.

These trials have been conducted, not only against traditional Lysozyme. They were also conducted against other available bio protective cultures!

It should be noted that!

The clostridial inhibition, that you will find within conventional bio protective cultures. To date has been primarily been by the use of bacteriocin-producing microbial strains!

Cell Population

No Blow has gone through extensive independent scientific studies, throughout it’s numerous trials conducted at Igea’s pilot plant.

Not only have Igea studied the cell count, but also the Ph stability over the period of one year. As you can see shown in the following two graphs.

One: When viewed along side it’s controls counterparts. It’s clearly shown, that No Blow is more then able to offer a comparable level of control of cell growth.

 Two: Once again viewing No Blow along side it’s controls. You are  clearly able to see the level of Ph stability offered, With No Blow once again offering a comparable stability to that of Lysozyme.
