Chymosin Rennet
One hundred percent Chymosin rennet’s, have rapidly become the go to rennet for the modern cheesemaker. This primarily due to the fact Chymosin offers tried & true results, consistently time after time. The additional benefit in the addition of Chymosin to your processing, is the production of a vegetarian end product. It should also be noted that with the use of one hundred percent Chymosin there’s a marked reduction in bitterness due to the proteins being cleaved in only one place.
All our Chymosin rennet styles are G.M free as well as being produced via fermentation in Europe through our partners at Proquiga Biotech.
