Here at JKM Foods, we strive to offer a range of styles & formats. So JKM foods can deliver solutions, that shall suit your induvial needs.

JKM Foods is currently able to offer a selection of Animal, Chymosin & Microbial rennets in a range of formats. These formats being paste, powder & liquid. We shall cover below what we are able to offer, to meet the unique needs of dairy producers all across the UK & Eire.

The Various Types Available.

Animal pepsin rennets are the traditional rennet of choice, for what is now a small number of cheese makers these days. And well here at JKM Foods we are able to offer a range of styles.

The range currently being supplied is the following: Bovine, Sheep & Goat pepsin based. These are available in an 80/20 Chymosin to Pepsin ratio.

JKM foods currently have the following styles available in either paste or liquid formats:

  • Bovine – single strength 200IMCU (liquid)
  • Goat – single strength 185IMCU (paste)
  • Lamb – single strength 185IMCU (paste)

In medium & Long maturation cheese it can be noted, that there is a more defined flavour development. However you will not have a cheese suitable for vegetarians, this is the trade off with animal rennets in the modern market place.

Chymosin based rennets have become the go to option, for a vast number of cheese makers within the UK.

Offering not only a vegetarian option for milk coagulation but a reduced bitterness in cheese production. This noted reduction in bitterness, is due Primarily to Chymosin cleaving the protein chains in one place over the multiple.

It should be noted that we have seen better yield in using chymosin over microbial rennet formats.

Currently JKM foods offer chymosin, in a liquid format in the following strengths:

  • Single strength – 200IMCU
  • Triple strength – 600IMCU

Microbial rennets are the classic option for cheese producers, who are looking for a vegetarian coagulant for there production flow.

With the evolution of these modern generations of microbial rennets, there has been a noted reduction in the bitterness produced in cheese production.

JKM foods currently has available microbial rennet in two formats liquid & Granular.

Currently available:

  • Double strength – 375IMCU (liquid)
  • 13 x strength – 2250IMCU (granular)
